3 Easy, Delicious Potato Soup Recipes to Try

There is nothing more comforting than a hearty bowl of potato soup to stave off the winter cold! In today’s post, we are giving three easy, delicious and fully loaded potato soup recipes you can whip up and share with your loved ones:

1. Classic Loaded Potato Soup

You will need:

4 slices bacon, diced
5 tablespoons unsalted butter
¼ cup all-purpose flour
3 ½ cups milk, or more, as needed
3 russet potatoes, peeled and cubed
2 green onions, thinly sliced
1 cup shredded cheddar cheese
½ cup sour cream
Kosher salt and freshly ground black pepper, to taste

Instructions

In a large skillet, turn the fire to medium high then add the diced bacon strips. Cook until brown and crispy then transfer to a paper towel-lined plate. Set the bacon aside.

In a large stockpot, melt the butter over medium heat. Whisk the butter until it becomes slightly brown then gradually add the milk. Continue whisking constantly until the mixture thickens. Add the potatoes and green onions and continue stirring.

Bring the mixture into a boil then reduce heat to simmer the potatoes for 15 to 20 minutes. Now, add the cheese and sour cream. Season with kosher salt and pepper to taste. If the soup is too thick, you can add more milk to adjust the consistency.

Serve the soup immediately in a large bowl garnished with cheese, bacon, and green onions.

2. Baked Potato Soup

You will need:

12 bacon slices, diced
2/3 cup margarine
2/3 cup all-purpose flour
7 cups milk
4 large potatoes, baked, peeled and cut into cubes
4 green onions, chopped
1 ¼ cup shredded Cheddar cheese
1 cup sour cream
1 teaspoon salt
1 teaspoon ground black pepper

Instruction

In a large skillet, fry the bacon over medium heat until brown. Place the browned bacon over a paper towel lined plate then set aside.

In a stockpot, melt the margarine over medium heat. Gradually whisk in the flour to achieve a smooth mixture. Stir in the milk gradually, whisking constantly to achieve a thick base. Now add the potatoes and onions. Cover the pot and bring the mixture to a boil.

Reduce the heat then simmer for 10 more minutes. Mix the bacon, sour cream, salt, and pepper and the cheese. Continue stirring constantly until the cheese is melted. Serve immediately and enjoy!

3. Extra Cheesy Loaded Potato Soup

You will need:

4 tablespoon unsalted butter
4 tablespoon all-purpose flour
6 cups chicken broth
1 cup sour cream
4 oz. cream cheese
3 pounds baked potatoes, precooked
8 oz. shredded sharp white cheddar cheese
1 teaspoon kosher salt
2 teaspoon black pepper
6 slices thick cut bacon, precooked and crumbled
3 oz. shredded mild cheddar cheese
Chopped chives

Instruction

In a large stockpot in medium high heat then melt the butter. Once the butter starts to melt, whisk in the flour then gradually add the chicken stock. Continue whisking then add the sour cream and cream cheese.

Slice all the potatoes in half then scoop out the insides. Add the potatoes to the pot. Mash the potatoes using a wooden spatula or a masher. Adjust the texture and consistency accordingly. Now add the sharp cheese, salt, and pepper. Mix continuously until the cheese is melted then serve immediately!
