3 Hearty Pressure Cooker Soup Recipes to Try

A pressure cooker is extremely versatile. It allows you to cook super easy, better tasting meals in minutes! You can also use a pressure cooker to whip up delicious, nutritious soups for you and the whole family. Today we are sharing our favorite soup recipes you can whip up using a pressure cooker:

1. Chunky n’ Spicy Chicken Soup

You will need:

2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
4 boneless, skinless chicken breasts
1 jar mild chunky salsa
2 cans tomatoes, peeled and diced
2 cans chicken broth
½ teaspoon salt
1 teaspoon freshly black pepper
1 teaspoon garlic powder
2 tablespoons dried parsley
1 tablespoon onion powder
1 tablespoon chili powder
2 cans black beans, drained
1 bag frozen corn

Directions

Start by setting the pressure cooker to sauté and add olive oil. Once the oil is hot, add the onions and cook until transparent. Add the garlic and cook until slightly browned. Add all the remaining ingredients except the corn and beans. Lock the pressure cooker’s lid and set on “high pressure” for 8 minutes then press start.

After 8 minutes, turn off the pressure cooker and wait for 10 minutes before doing a quick pressure release. Remove the chicken breasts to shred using a fork. Add the shredded chicken meat back into the soup and stir in the corn and beans. Select the “simmer” setting and stir occasionally until the beans have softened. Serve with shredded cheese and sour cream and enjoy!

2. Creamy Potato Cheese Soup

You will need:

2 tablespoons butter
½ cup chopped onion
6 cups peeled and cubed potatoes
2 14 oz. cans chicken broth
1 teaspoon salt
½ teaspoon black pepper
1/8 teaspoon red pepper flakes
2 tablespoons dried parsley
2 tablespoons cornstarch
2 tablespoons water
3 oz. cream cheese, cut into cubes
1 cup shredded cheddar cheese
2 cups fat-free cream
1 cup frozen corn
6 slices crisp-cooked bacon, crumbled

Directions

Set the pressure cooker to sauté and then add the butter to melt. Once butter is melted, add the onions until tender. Pour in the chicken broth and add salt, pepper, red pepper flakes, and parsley. Now put the steamer basket into the pressure cooker and add the diced potatoes. Lock in the lid, set on “high pressure” for 4 minutes and press start.

After 4 minutes, wait for 5 minutes before going a quick pressure release. Remove the potatoes and the steamer basket and set aside. In a small bowl, dissolve cornstarch in 2 tablespoon water. Set the pressure cooker to simmer and add the cornstarch mixture. Stir constantly then gradually add the cream cheese and shredded cheese. Stir until cheese is melted. Finally, add the can of chicken broth, cream, corn, crumbled bacon, and cooked potatoes. Simmer for 8 minutes and serve!

3. Hearty Chicken and Wild Rice Soup

You will need:

2 tablespoons butter
1 cup chopped onion
1 cup diced carrots
1 cup diced celery
2 14 oz. cans chicken broth
2 large boneless skinless chicken breasts, uncooked and diced
6 oz. package wild rice
1 teaspoon salt
½ teaspoon black pepper
A pinch of red pepper flakes
1 tablespoon dried parsley
2 tablespoons cornstarch
2 tablespoons water
4 oz. cream cheese, cut into cubes
1 cup milk
1 cup half and half

Directions

Set the pressure cooker to select and add the butter to melt. Once the butter is melted, add the onion, carrot, and celery and cook until tender for 5 minutes. Pour in the chicken broth, chicken, wild rice (do not add the packed seasoning) salt, pepper, and parsley to the pot.

Lock in the lid, set on “high pressure” for 5 minutes cooking time and press start. After 5 minutes, turn off the heat and wait for 5 minutes. Then, do a quick pressure release. Leave the soup to simmer.

Dissolve two tablespoon of cornstarch in water. Add the cornstarch mixture and stir constantly. Add the cubed cream cheese and stir until melted. Finally, add the milk and half and half and simmer for 5 minutes. Serve and enjoy!
